Strawberry Jam Ingredients

  • Strawberries: Fresh, ripe strawberries are the star ingredient in strawberry jam. They provide the natural sweetness and vibrant aroma that make the jam delicious. Choose ripe strawberries for the best flavor and texture.
  • Sugar: Sugar is used to sweeten the jam and help preserve it. It also helps texture the jam and helps it set properly.
  • Lemon juice: Lemon juice helps balance the sweetness of the strawberries and the sugar. It also acts as a natural preservative and helps the jam set properly by interacting with the pectin in the fruit.

5 cups
The ingredients you need:
2 pounds fresh strawberries, hulled
4 cups white sugar
¼ cup lemon juice
Let’s start !

In a large bowl, mash the strawberries in batches until you have 4 cups of strawberry puree.

Combine mashed strawberries, sugar, and lemon juice in a heavy-bottomed saucepan. Stir over low heat until sugar dissolves. Increase heat to high and bring mixture to a rolling boil. Continue to cook, stirring frequently, until the mixture reaches 220 degrees F (105 degrees C).

After 10 to 15 minutes, test for doneness by dropping a small spoonful of jam onto a frozen plate. Let sit for 1 to 2 minutes; if the jam appears to gel, it is ready. If the jam appears thin and runny, continue cooking.

Pour jam into hot sterile jars, filling to within 1/4 inch of the top. Cover with lids and screw rings on tightly.

Place a rack in the bottom of a large stockpot and fill halfway with water. Bring the water to a boil and use a rack to lower the jars into the boiling water about 2 inches apart. Add more boiling water to cover the jars at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes. Remove the jars from the stockpot and let them rest, spaced several inches apart, for 12 to 24 hours. Store in a cool, dark place.

To ensure your homemade strawberry jam sets properly and achieves the perfect texture, it's essential to use ripe strawberries and fresh lemon juice. Ripe strawberries are naturally higher in pectin, which helps the jam thicken and set. Additionally, the acidity from the lemon juice not only enhances the flavor of the strawberries but also helps activate the pectin, ensuring a firm and stable gel. Be sure to cook the jam until it reaches the gel point, which you can test by dropping a small spoonful onto a frozen plate. If the jam wrinkles when you push it with your finger, it's ready to be canned. By following these tips, you'll create a perfectly set strawberry jam that's sure to impress!
