  1. Place mounds of coarse salt (1 tablespoon each) on a baking sheet and place the potatoes on top. Each potato should be on its own mound. (Alternatively, you can bake the potatoes in foil).
  2. Then, preheat the oven to 338 degrees F (170 degrees C) and put the baking sheet with the potatoes in the oven for 30-40 minutes.
  3. When the potatoes are baked, take them out and let them cool down. Next, peel the potatoes.
  4. Grate the potatoes on a grater with small holes, add 1 egg, 4,6 ounces (130 g) of flour, nutmeg, salt, and pepper.
  5. Then, sprinkle the table with the rest of the flour, roll out the dough, and form rolls 1 cm in diameter.
  6. Cut the rolls into equal portions of 0,4-05 ounces (10-15 g) each and form them into balls. Then shape them into gnocchi with a paddle.
  7. Cut the parsley into strips.
  8. To prepare the sauce: Put the pan on the heat, add the broth, and let it evaporate twice, add the chopped sun-dried tomatoes and the cold butter (in pieces). When adding the butter, do not let the sauce boil. 
  9. Then, add half of the grated Parmesan cheese, parsley, salt, and pepper to the sauce.
  10. Put the saucepan on the stove and bring the water to a boil, add the salt. Add the gnocchi and cook for 2-3 minutes.
  11. When cooked, add the gnocchi to the pan with the sauce. (If the sauce is too thick, add a little water from the saucepan in which the gnocchi were cooked.)
  12. Stew for 1 minute, place on a plate, and sprinkle with Parmesan cheese.

Can You Make Gnocchi Ahead of Time?

Ingredients you will need
18 ounces (500 g) potatoes
5⁄8 cups / 5 ounces (140 g) flour
1 pc chicken egg
0,04 ounces (1 g) nutmeg
7,05 ounces (200 g) chicken broth
3,5 ounces (100 g) butter 82%
1 bunch parsley
1,8 ounces (50 g) sun-dried tomatos
0,7 ounces (20 g) Parmesan cheese
