Ratatouille Disney Recipe step by Step 9-10

  1. To make the ratatouille, cut the onion and bell pepper into strips, and the garlic into slices. Then, thinly slice the zucchini, eggplant, and tomatoes (it is not necessary to cut the vegetables to the end, as it is important that all the slices are as even as possible, the rest of the vegetables will be used for the sauce).
  2. Cut the basil into strips, leaving a few leaves for decoration.
  3. To prepare the sauce: Heat a saucepan and add the olive oil. Sauté the onion over medium heat for 4-5 minutes, add the bell pepper and sauté for another two minutes, then add the bell pepper, the rest of the tomatoes, the eggplant, and the zucchini.
  4. Simmer for another 3-4 minutes, then add the garlic, thyme, rosemary and white wine.
  5. Simmer for a few more minutes to evaporate the wine, then add the chopped basil. Season to taste with salt and pepper.
  6. Then, purée the mixture in a blender. Pour into the bottom of the baking dish.
  7. Place the vegetables sideways on top of the sauce, mixing them one by one (zucchini, eggplant, tomato, zucchini, etc.).
  8. Next, sprinkle the rest of the thyme and rosemary on top and cover with parchment. Cover the parchment with a spoon to keep it in place.
  9. Preheat the oven to 356 degrees F (180 degrees C) and bake for 30 minutes.
  10. Place the cooked vegetables on a plate, pour the sauce from the baking dish, and garnish with the remaining basil.

Chef Recipe Tips:

  • It is very important that the slices are thin and the same size so that they cook evenly.
  • You can experiment with herbs and add sage or lemon balm to the dish to make it more flavorful and interesting.

How to Store Ratatouille?

Ratatouille is best served immediately. However, if you have leftovers, they can be refrigerated for up to 4 days. Remember to bring the dish to room temperature and place it in an airtight container or resealable plastic bag before placing it in the refrigerator.

Advice For The Perfect Ratatouille

  • Ratatouille, the dish from the Disney movie, is a great meal to enjoy during summer, but it can be prepared and enjoyed all year round. If you can’t find fresh vegetables, you can use frozen ones as a substitute. However, you would need to cook them for a bit longer, but the outcome will be equally delicious.
  • I prefer using a mix of bell pepper colors, but one color works too.
  • If you have the time, consider roasting the vegetables before adding them to the ratatouille for a boost in flavor.
  • This dish is vegan, but you could also add shredded chicken or sausage.

A highly nutritious dish that can become your perfect dinner, especially if you're watching your figure or trying to lose weight. The fiber from the vegetables, combined with the protein and fats from mascarpone cheese, will provide you with satiety without a heavy feeling and without excess calories. This is a wonderful dish for the cold season when our body needs warmth from the inside and an abundance of vitamins found in seasonal vegetables.
