1 Preheat a gas grill for high heat or arrange charcoal briquettes on one side of the barbecue, and lightly oil the grate.
2 Combine cumin, chili powder, paprika, salt, and pepper in a small jar; close the lid and shake to mix.
3 To prepare the racks of ribs, first trim the membrane sheath located at the back of each rack. Use a small, sharp knife to separate the membrane from each rib and then snip it off as much as possible. Next, sprinkle the desired amount of the rub onto both sides of the ribs. Be careful not to thoroughly rub the spices into the ribs, as this may cause them to become too dark and spicy. Any unused spice mix can be stored in a jar for future use.
4 To prevent flare-ups and capture drippings, you can place aluminum foil on the lower rack. For cooking ribs, place them on the top rack of the grill, away from the coals if you’re using briquettes. After reducing the gas heat to low, close the lid and cook the ribs undisturbed for about an hour, or until the meat pulls away easily from the bone. An instant-read thermometer inserted into the center of the meat should read 145 degrees F (63 degrees C).
