Ingredients:
- 1 ¾ pounds lean ground beef
- ½ cup bread crumbs
- 2 tablespoons lemon grass, minced
- 2 tablespoons chopped fresh basil
- 2 tablespoons minced shallots
- 2 red chili peppers, seeded and minced
- ¼ cup chopped peanuts
- salt and pepper to taste
- 2 limes
Instructions:
- Preheat the grill to high heat.
- In a large bowl, mix together the ground round, bread crumbs, lemongrass, shallots, chilies, and peanuts. Season to taste with salt and pepper. Shape into patties. If making ahead, add peanuts when ready to grill.
- Lightly oil the grill grate and place the burgers on the grill. Cook for 3 to 5 minutes on each side. Remove from grill and sprinkle burgers with lime juice.

Lamb Patties:
- 4 large unpeeled garlic cloves
- 1 ¼ pounds ground lamb
- ½ cup crumbled feta cheese
- ¾ teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon ground black pepper
Cucumber Sauce:
- ½ large cucumber, peeled, grated and squeezed very dry in a clean towel
- ¾ cup sour cream
- 1 tablespoon minced fresh mint leaves
- 1 teaspoon red or rice wine vinegar

- salt and pepper to taste
Other:
- 4 small (4 inch) pita breads
- 4 large, thin red onion slices
- 4 large, thin tomato slices
Instructions:
- Make patties: Toast garlic cloves in a small skillet over medium heat until browned, about 5 minutes. Peel, chop, and set aside.
- Break lamb into pieces in a medium bowl. Sprinkle with minced toasted garlic, feta cheese, oregano, salt, and pepper; stir to combine with a fork. Divide into 4 equal servings. Roll each portion back and forth between cupped hands to form a ball. Press with fingertips to flatten to about 4 inches wide. Refrigerate patties.
- Make the sauce: In a small bowl, whisk together cucumber, sour cream, mint, vinegar, and garlic until combined. Season to taste with salt and pepper. Refrigerate until ready to serve.
- Cook patties: Prepare a hot fire on one side of the grill. Replace the rack. Once the coals have coalesced into a white ash layer, lay the patty on the rack and close the cover. Cook on the preheated grill until cooked through, about 4 to 5 minutes per side for medium-rare to medium-well burgers. An instant-read thermometer inserted into the center of each patty should register a minimum of 160 degrees F (72 degrees C). Transfer patties to a plate to rest.
- Toast the pitas on the hot grill until they are spotty brown and warm, about 1 minute on each side. Split toasted pitas in half crosswise. Spread about 2 tablespoons of the sauce on 4 pita halves. Top each with a slice of red onion, a slice of tomato, and a burger patty. Top each burger with the remaining sauce. Top with remaining pita halves.

- Preheat the gas or charcoal grill. In a small bowl, whisk together the mayonnaise, 1 tablespoon of the Sriracha sauce, the lime juice, and 1/4 teaspoon of the soy sauce until well blended. Refrigerate until serving.
- In a large bowl, combine the beef, 2 tablespoons of the Sriracha sauce, and 2 tablespoons of the soy sauce. Form the mass into 4 patties, about 1/2 inch thick.
- Place the patties on the grill over medium-high heat. Cover grill; cook 10 to 12 minutes, turning once, until an instant-read meat thermometer inserted into the center of each patty registers 160° degrees F (71 degrees C). Top each burger with 1 to 2 slices of cheese. Cover; cook 1 minute more, or until cheese is melted.
- Spread spicy mayonnaise on the cut sides of buns. Place burgers on buns; top with jalapeños. Cover with the tops of the buns.

- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon seasoned salt
- ½ teaspoon ground black pepper
Instructions:
- Preheat an outdoor grill to medium heat and lightly oil the grate.
- In a large bowl, combine ground beef, feta cheese, minced onion, red bell pepper, mint, parsley, garlic powder, onion powder, seasoned salt, and black pepper. Mix until evenly mixed; form into 6 patties.
- Cook the burgers until they begin to set and are hot and slightly pink in the center, 4 to 5 minutes per side. An instant-read thermometer inserted into the center of each should read 140 degrees F (60 degrees C).

- Combine burger ingredients in the Deluxe Stand Mixer bowl with the paddle and mix for 45 seconds.
- Using the extra-large scoop, place 2 scoops (¼ cup/60 mL each) into a greased burger press. Repeat until you have 4 patties.
- Whisk sauce ingredients together in a small bowl and set aside.
- Brush the 12″ (30 cm) cast-iron skillet with oil and preheat over medium-high heat for 3-4 minutes. Grill patties for medium doneness for 4-5 minutes on each side.
- Add cheese slices to each patty during the last minute of cooking. Remove the patties from the pan.

- To make pulled pork, start by pouring vegetable oil into the bottom of a slow cooker. Place the pork roast into the slow cooker, and pour in the barbecue sauce, vinegar, and chicken broth. Stir in the brown sugar, yellow mustard, Worcestershire sauce, chili powder, onion, garlic, and thyme. Cover the slow cooker and cook on low heat for 10 to 12 hours, or on high heat for 5 to 6 hours, until the pork is tender and can be easily shredded with a fork.
- Take the pork out of the slow cooker and use two forks to shred it. Put the shredded meat back into the slow cooker and mix well with the juices.
- Spread butter on both halves of the hamburger buns. Toast them butter-side down in a skillet over medium heat until golden brown. Fill the toasted buns with pulled pork.

- 1 tbsp chili powder
- 1 tbsp cumin

- 15 oz canned tomatoes
- 8 oz canned tomato sauce
- green onions diced to top
- vegetable oil
Instructions:
- Dice onion and green onion. Set the green onion aside for the final topping.
Chili Topping
- Heat some oil in a skillet and cook onion until soft.
- Add 1/2 pound ground beef and cook until browned.
- Add the chili powder, cumin, paprika, garlic powder, tomatoes, and tomato sauce. Stir to combine and warm. Set aside.
Burger
- Add the chili powder and garlic powder to the remaining hamburger mixture and mix well. Make 4 patties.
- Heat 1 tablespoon oil in a skillet and cook burgers on the first side for 1.5 minutes.
- Flip burgers and top with chili and then cheese. Cook until done (about another minute or 2). Cover to let the cheese melt.
- Place the burgers on the bun and top with the jalapeños and green onions. Enjoy!

- 3 ounces (85 grams) extra-sharp cheddar cheese, shredded or sliced
- 1 ripe plum tomato, cut into 6 thin slices (ends reserved for another use)
