  1. First, dice the onion, and bell pepper, and cut garlic and ginger into small cubes. Slice the celery stalk, chili, and green onions. 
  2. Then, dice the sausages and chicken breast separately.
  3. Peel the shrimp, remove the shells and heads, slit the back, and clean out the intestines.
  4. Then, heat a saucepan and fry the sausages over a low heat until golden brown, releasing the fat and cooked through. Remove and set aside. 
  5. Add the oil to the pan and sauté the onion for 2 minutes, then add the red pepper and celery and sauté for another 2 minutes. 
  6. Add the chicken and cook for another minute, then add the thyme, rosemary, garlic, ginger, cardamom, paprika, bay leaf and chili. Season with salt and pepper. Fry for a few minutes.
  7. Purée the pelati tomatoes separately. 
  8. Add the pelati tomatoes to our mixture and pour the broth over it. 
  9. Then, add the sausages.
  10. Toast the flour separately in a dry frying pan. Then add the butter. Cook over low heat until the flour and butter are golden brown. Add to the soup.
  11. Season to taste with salt and pepper.
  12. Then, add the shrimp.
  13. Remove the rosemary and bay leaf.
  14. Add 3,5 ounces (100 g) of rice and 7 ounces (200 g) of water to a saucepan. Cook over low heat for 10 minutes. Close with the lid and cook for another 10 minutes until the rice is done. 
  15. Add the green onions to the soup. Transfer the rice to a bowl and add the soup.

What is the Origin of Gumbo?

Where gumbo comes from and where it goes is constantly evolving. Because of the conflicting sources of its origin, gumbo cannot be attributed to a single culture. Rather, it is a blend of the various cooking styles that made it to South Louisiana, including African, Native American, and European. 

In spite of the rather complicated history of its origins, I do know that gumbo is symbolic of the people who have built their lives in South Louisiana. Because gumbo is often synonymous with Cajun culture, Cajun gumbo uses ingredients that are available in the river parishes: produce such as bell peppers, okra, and sassafras (filé powder), as well as non-perishable flour and oil for the roux.

You can save gumbo for future enjoyment by refrigerating it. This will keep leftovers fresh and safe to eat for about three to four days. The rice absorbs the flavors of the other ingredients as it cooks. Gumbo is a flavorful stew or soup characterized by a rich, savory. Depending on the choice of thickening agent, it tends to have a soup-like consistency and can vary from thin to moderately thick. Both dishes are celebrated for their rich flavors and are emblematic of Louisiana’s diverse and vibrant culinary culture.

I cannot consider this dish super healthy because having such a large variety of protein sources in one dish can be quite a burden on the digestive system. In general, combining meat protein with fish/seafood (or any other type of protein) in one meal is not the best idea. Meat is a self-sufficient source of protein that ideally should be combined only with vegetables or a very light side dish. In this dish, there are not just one, but two meat products (both of which are quite fatty): bacon and Andalusian sausages. Even their combination with each other is not ideal (not to mention that individually, bacon and sausages are not the healthiest meat options), and combining them with crab meat and shrimp is even less suitable for a healthy meal. In this case, I would recommend recalling one of the main principles of healthy eating: the healthiest food is simple food, and looking at the number of ingredients and the preparation process of this dish, it's unlikely to evoke a sense of simplicity.

The ingredients you need:
1 pc chicken breast
7 ounces (200 g) shrimps
1 pc chili pepper
7 ounces (200 g) smoked jambalaya sausages
3,5 ounces (100 g) rice
34 fluid ounces (1 l) chicken broth
1 ounce (30 g) flour
1 ounce (30 g) butter
3-4 pcs bay leaf
1 pc onion
1 pc celery stalk
1 pc bell pepper
2-3 cloves garlic
14 ounces (400 g) pelati tomatoes
1 sprig thyme
1 sprig rosemary
0,5-0,7 ounces (15-20 g) ginger
0,04 ounces (1 g) smoked paprika
0,02 ounces (0,5 g) dry chili pepper
0,04 ounces (1 g) cardamom
0,4 ounces (10 g) worcestershire sauce
3-4 stalks green onion
salt
pepper
oil for frying
