What is a Strawberry Sabayon?

Strawberry Sabayon is a delightful dessert made with fresh strawberries that are topped with a light and airy custard-like sauce called sabayon, also known as zabaglione. This strawberry sabayon will delight your palate with its harmonizing blend of aromas. Sweet, tangy strawberries provide a burst of freshness while the sabayon’s creamy texture and delicate sweetness add richness and depth. The sauce, which is made from egg yolks, sugar, and wine, offers subtle notes of the chosen wine to enhance the overall taste experience.

As far as its origins are concerned, sabayon has its roots in the Italian and French cuisines, where it is commonly served as a dessert sauce or topping. The exact origins of strawberry sabayon are unclear. However, the combination of strawberries and sabayon likely originated as a creative way to showcase seasonal fruit in a luxurious dessert. Over time, variations of this dish have appeared in various culinary traditions, each adding their own twists to the classic recipe.

Strawberry Sabayon Ingredients

recipe for sabayon with strawberry

  • Strawberries: Fresh, ripe strawberries add sweetness, juiciness, vivid color, and refreshing flavor.
  • Cookie Crumbs: These crumbs add a crunchy texture and a hint of buttery sweetness to contrast with the creamy sabayon, likely from a cookie such as shortbread or biscuit.

Sabayon cream:

  • Eggs: The eggs serve as the base of the sabayon cream and contribute to its rich and creamy texture.
  • Sugar: Sweeten the sabayon cream, balancing the acidity of the fruit and adding sweetness to the dessert.
  • Prosecco: Adding Prosecco to Strawberry Sabayon enhances both the flavor and texture of this classic dessert.
  • Orange Juice: Adds a zesty citrus flavor to the sabayon and enhances the overall flavor profile with its bright acidity.
  • Salt: Helps balance the sweetness and enhances the flavors of the other ingredients.

How to Make Strawberry Sabayon at Home?

  1. To prepare the cream: separate the whites from the yolks. Then, place the yolks in a bowl and mix with the sugar and salt.
  2. Then, place the saucepan on the stove and place the bowl on top so that the water does not touch its bottom.
  3. Mix well, add the Prosecco, and cook until the cream thickens (6-7 minutes).
  4. Then, cover it with plastic wrap and put it in the refrigerator to cool.
  5. Peel and slice the strawberries.
  6. Then, spread the cookie crumbs on the bottom of the glass, place the strawberries on top, and pour the cream over them.
  7. Repeat step 6 to make 2 layers.

Chef Recipe Tips:

  • You can make your own cookie crumbs by blending your favorite cookies in a blender.
  • You can use any berries instead of strawberries in this dessert.
  • Instead of Prosecco, you can use liqueurs: Cointreau, Baileys, and others.

How to Fix a Sabayon That is Too Thick?how to make sabayon with strawberry

Don’t worry if your sabayon is too thick! Here are two ways to fix it:

  • Beat ½ cup of heavy cream until it forms soft peaks, and carefully fold the whipped cream into the sabayon to prevent the sabayon’s frothy consistency.
  • You can use a siphon, as I did. Pour the sabayon and ½ cup of the heavy cream into the siphon and follow the same steps as described above.

Make Sabayon with Strawberry Ahead of Time

Strawberry sabayon is a delicious and elegant dessert, but it can be a bit time-consuming to make just before serving. To preserve the dessert without compromising its delicious flavor and texture, the sabayon can be refrigerated for up to 6 hours in the charged siphon.

How to Serve Strawberry Sabayon?homemade strawberry sabayon recipe

To store Strawberry Sabayon, allow it to cool to room temperature, then transfer it to an airtight container and put it in the refrigerator immediately, where it will be kept for 2 to 3 days. To prevent the formation of skin, place a piece of plastic wrap directly on the surface before sealing the container. Serve with fresh berries, sponge cake, or other desserts for a delicious treat. Gently whisk or stir to restore the creamy texture. Proper storage will help preserve the quality and flavor of Strawberry Sabayon. You will enjoy this delicious dessert every time.

Sabayon Variations

  • Mixed Berry Sabayon: Substitute mixed berries like raspberry, blueberry, and blackberry for color and flavor.
  • Citrus Sabayon: For bright, tangy flavors that complement the sweetness of the strawberries, add zest from citrus fruits such as lemon, lime, or orange to the sabayon mixture.
  • Chocolate-Dipped Strawberry Sabayon: Serve Strawberry Sabayon with chocolate-dipped strawberries for an indulgent dessert combining classic strawberry and chocolate flavors.
  • Almond Sabayon: Incorporate almond extract or amaretto liqueur into the sabayon mixture for a nutty flavor that pairs well with strawberry sweetness.
  • Coconut Sabayon: Incorporate coconut milk or cream into your sabayon mixture for a tropical flavor, and top with toasted coconut flakes for extra texture and taste.
