Then, the cook cools the rice down to room temperature, during which it absorbs the vinegar mixture and becomes slightly sticky, ideal for rolling into sushi. The ideal choice for making sushi is short-grain Japanese rice, commonly sold as “sushi rice.” It has a higher starch content that gives it a sticky texture that is essential for rolling the perfect sushi. Whether you’re a sushi enthusiast or a chef, using the right type of rice can make all the difference in achieving a delicious and authentic sushi experience.

Sushi rice is a key ingredient in the beloved dish, having a distinct flavor that perfectly complements the other ingredients. Traditionally, it is seasoned with rice vinegar, white sugar, and salt. This recipe, however, brings a unique twist to the classic by using vegetable oil instead. HOW TO MAKE SUSHI RICE:
My favorite way to make sushi rice is to cook it al dente, so it’s firm but not crunchy. When stirring, use a gentle slicing/folding method to keep the grains separated and avoid mashing the rice. Good sushi rice should look shiny and polished, with each grain remaining separate. Regardless of how it turns out, I guarantee it will be delicious and work well in sushi!
Use a rice cooker or Instant Pot for short-grain rice. A stovetop works too, but cook time varies. Ensure the rice is tender before removing it from heat.
Soaking rice in its cooking water before cooking for 20-30 minutes is a common practice if you have extra time. However, we tried this method a few times and didn’t notice any significant difference. Therefore, I usually skip this step and cook the rice immediately after rinsing.
We will make sushi rice by following the instructions in the recipe below. A quick overview of the process is included.
- Rinse the rice. An essential first step is to rinse the rice thoroughly with cold water in a fine-mesh strainer until the water runs clear. Drain off any extra water.
- Cook the rice. To cook the rice, boil it in water until it becomes tender. If you prefer, you can add a sheet of kombu while cooking. Below are the instructions for cooking rice using a rice cooker, pressure cooker, or stovetop.
- Make the sushi vinegar. While the rice is cooking, heat vinegar, sugar, and salt until the sugar dissolves. You can use a microwave or a small saucepan on the stove.
- Season the rice. To make sushi rice, transfer cooked rice to a mixing bowl, drizzle sushi vinegar over it, and gently fold using a spatula or rice paddle. Slice at a 45-degree angle and lift and fold the rice until vinegar is evenly mixed.
- Cool. To prevent the rice from drying out, cover the mixing bowl with a damp towel and make sure it touches the surface of the rice. Allow the rice to cool down to nearly room temperature by leaving it on the counter or refrigerating it.
- Serve. Use the rice immediately in a recipe for best results, or transfer it to an airtight container and refrigerate for up to three days.
NOTES
Rice Cooker Instructions: Briefly stir the rice and water together in the rice cooker bowl. Add kombu on top of the rice, cover, and cook according to the instructions. Discard the kombu before serving.
Instant Pot Instructions: To cook rice in an Instant Pot, start by stirring the rice and water together in the pot bowl. Place the kombu on top of the rice, cover the pot, and pressure cook on high for 5 minutes. After 5 minutes, let the pressure release naturally for 10 minutes, then quickly release the remaining pressure. Finally, remove and discard the kombu before serving the rice.
Stovetop Instructions: To cook rice using this method, start by adding 2 1/4 cups water to a large saucepan, along with the rice. Stir the rice and water together briefly, then place a piece of kombu on top of the rice. Cover the saucepan with a tight-fitting lid and turn the heat to medium-high. Cook until the water reaches a simmer, then reduce the heat to medium-low to maintain the simmer. Cook the rice for 16-18 minutes or until it absorbs all of the liquid and becomes tender. Once cooked, remove the saucepan from the heat (with the lid still on) and let the rice steam for an additional 10 minutes. Finally, discard the kombu before serving.
